Had this problem on a Hayabusa K8. Just had a new set of Metzeler tyres, both pro fitted & balanced (dynamic). Rear was fine, yet front was misbehaving like yours. OK up to about 40 mph, but felt dangerous by 60 mph. Held it's pressure just fine.
Turned out the tyre bead had not quite popped out cleanly when mounted on the rim. There was a very slight run out evident at the check line; barely visible though. When lubricated & refitted it took well over 50 psi & quite some 'bang' before it seated correctly on the rim. Then freshly balanced, all was fine. Obviously this was a cast alloy rim - with the S10 it would seem sensible to check the rim is true & spokes taut before mounting the tyre; sounds like you have done this already.
