I agree for most everything except the oil drain plug. I've always just "snugged it up" on all my vehicles and I've never had a leakage problem or a problem getting them back out. I've heard stories of guys who tried to torque the plugs to spec using a wrench and ended up with issues. Some of the Tiger1050 guys even cracked their sumps.
This goes for oil filters as well. Forget all that garbage about "X turns once contact is made" etc. Or if a filter has torque specs, ignore them. Hand tighten until it's tight, that's good enough. I've never had a filter problem ever just doing this.

Wow, maybe small town living has ruined me, or maybe I'm old and out of touch with the world, but $250 for an oil change and final drive fluid change is simply over the top.

I would have to work at it to spend $60 for supplies to do this service, if I couldn't do it in under an hour including all the checks Yamaha requires I would be ashamed of myself. Do shops really charge close to $200 an hour for labor?

Agree with that. To me $250 is a new set of tires. Almost always do my own work. :)
