I understand that the Rigid Industries light bar you mention only has one lead (Rigid Industries 90631 SR-Series White 6" Spot/Flood Combo LED Light Bar).
So when switched on you can only get the combo.
Making up a gang of separate light pods like these 4 from Twisted Throttle (6 would fit) and would allow mixing and matching of spot and flood patterns though that would be with 2 switches.
I run 4 large LEDs on one switch and the 4 smaller Twisted Throttle LEDs on another switch, with both switches on the left bar.
All of the lights are run through the high beam only as is the law where I'm from, so I can have:
- low beam only
- high beam plus small LEDs (read FLOODS in your case)
- high beam plus large LEDs (read SPOTS)
- high beam plus all 8 LED lights (read FLOODS and SPOTS)

Just buy two sets of lights and run one from one pole and
the other from the other pole of the switch.
Do you mean a 3 position rocker switch: on/off/on.
That gives eg: flood/off/spot
No way to get flood and spot available both simultaneously and separately as OP requested with that kind of switch unless tricky diodes are used and even then it would be eg: flood/off/combo
