I picked up my nice new 2016 leftover in Wisconsin this week.
I just got a deal on a seat concepts but it is the standard height. i am going to make it into a low version with a little foam shaving. Has anyone done this?
I also want to get some bars. I am thinking some Altrider bars but what do you think is best?
I am also thinking a skid plate. What skid plate is good and lets me change the oil filter?

Haven't messed with the bars or seat, but I like the Ravetech skid plate. It has to come off to change the oil but it's easy to do.

My two cents: Altrider skid plate & Mastec crash bars. It's not a heavy duty one, but works for my purposes. I like the fact that there are no holes on the lower front to grab rocks or allow debris scooping. I do have to remove the skid plate for filter change, but it's easy with no issues. The crash bars give good drop protection, and the right side allows access to battery & tool kit without bar removal. I did the "seat leveling" as described in this forum. Farkeling is SO much a personal thing. There will be plenty of advise for you. Congratulations on the new ride; enjoy. ::001::

Congrats on finding the bike.
You might try the SeatConcepts with some tape before you cut it.
There are a lot of threads here about what people think about various skid plates and bars. I'm not being snarky and folks will weigh in as they please - just pointing out that with an easy search you can probably answer your own questions. The answer is directly related to how hard you think you will be running the bike and testing each of them. SW-Motech and GIVI skid plates are great for the least expensive answers to run on gravel roads. Member Tabasco makes a set which came off a very good looking bull dozer (priced to match) at the very high end.
