Detour, but most important ingredient to good coffee is freshly roasted beans, about equal is that they're freshly ground. Don't buy from a grocery store, go straight to a coffee roaster (in store/or online). Highly recommend a decent burr grinder at home to grind your beans right before brew.
As far as coffee when camping, I go for "cowboy" coffee for the sake of simplicity and minimalism. Grind up some beans before I leave home. In the morning, boil some water, mix up a couple teaspoons of coffee right in the cup. Enjoy
Grinds settle at the bottom of the cup, but you will get some in your mouth, all part of the camping experience. Cleanup involves simply rinsing out the cup
If you want a more cultured experience, I cannot recommend using an Aeropress enough. At home or otherwise. Makes absolutely delicious coffee with near zero cleanup.
I've heard good things about the Starbucks Via instant packets, there's also a bunch of hipster instant packet alternatives, but I keep on forgetting to try any of it.
