This year I'm going to take along a small ax and a knife to handle camp chores. I've been using a large knife (6" blade), as a "do it all" tool, but it doesn't really do anything "well". It does get the job done, however, and would be the best choice if one were limited to a single tool.
I just bought this Gransfors Bruks Wildlife Ax (weighs a little over 1 lb.), and will pair it with either a Mora 746 or a Buck Vanguard 192 (both great knives with 4" blades, though the Buck is much more robust). The GB for fire prep and the knife for food prep and all around duty.
What do you guys use?
