This certainly looks like some fluid is leaking from here (2019 with 6000 miles) Has anyone seen this before? I thought this is just an empty shaft tunnel?
Can oil leak from here?

It is empty, but the u-joint and shaft spline are right there.
Some grease will be slung out from the spline and joint and lightly coat the inside of the tunnel.
Very common to see a slight seep at that joint as the grease migrates through the seam.
No issue. Just pull the rubber off and you can see it.

Yes. Oil can leak from from the seal in the pinion gear housing. Pull the boot back and inspect with flash light.

Early in my bikes life I had 'leakage' exactly the same as you
Thought I'd keep an eye on it but after a while is stopped and I'd forgotten about it until you posted that photo
No idea what it was but the bike is now on 43k with no problems
