A couple of valve adjustment questions

I'm currently in the midst of a valve adjustment on my 2012 S10 and I have a few questions I want to confirm in the interest of dotting all my i's and crossing all my t's.

First of all, any 9.48 mm shims should work (given that they're the suitable thickness, of course)? For some reason, when I look up either the Pro X or Hot Cams shims, they do not list the super tenere as a fitment, which I do not understand.

Second, the manual calls for molybdenum disulfide oil when reassembling the shims and buckets. From what I can tell, this an assembly lube generally speaking. Do other folks use this/ is it necessary? Or is engine oil sufficient?

Finally, I am in no hurry at all to complete this project. I'm taking my time, triple and quadruple checking everything, measuring again for good measure, before I even think about turning the key on (once it's all back together). What I'm curious about, since I am learning a lot about engines as I go, is this: hypothetically, if the cam timing were off and I rotated the crankshaft manually, and the valves were to contact the piston, would this still be enough to damage a valve(s) or would the engine not be turn-able by hand at that point?
