You could make a good trip down from Durban.
Start down from wildcoast sun, to Mkambati, Mboyti, down to Port Saint Johns, very scenic with plenty waterfalls, two of which flow directly into the sea (One at Mkambati, and Waterfall Bluff)
After port Saint Johns, head down to Coffee Bay, Hole in the Wall, The haven, Seagulls, Treneries, Wavecrest and to Kei Mouth, cross the river by pont.. Will be dirt (some interesting) from Port Saint Johns to Kei Mouth, advise at least two bikes on this stretch as it is remote.
After Kei Mouth,, head up towards Hogsback, then head out to baviaanskloof and Die Hell (this route and order I am still looking into, will be doing part of this route next month). This stretch has a lot of civilisation, and support is relatively easy.
After that, George, Knysna garden route, can also shoot down in the Western Cape to the coastal areas, and maybe also head down do Malgas, and cross the river there by pont. This way you would have used all ponts that are functional in South Africa, all two of them.
The above route will cover the most scenic areas in South Africa (my opinion, so must be true).
