Curious. I was on a parts website recently and it asked if I had a XTZ12....model BB, BCB, BCL, or BL!
I then put mv VIN into a decoder and it came back that my 2012 is a XT1200ZC!
Any sense-making of all this?
Is it important at all?
What differences exist (apart from the major upgrades of including more ride modes and cruise control, etc.)?

"C" is California spec model.
The different letter designations that you referred to above are the different color options that the bike may have come with.

The codes you're seeing in parts listings are different colors. BB = Black, BL = Blue, etc.. Any C in the code indicates a California emissions model of that color. Virtually all the non painted parts are the same. The exceptions being emission stuff and parts for ES models that are not present on Std models. ES being Electronic Suspension.
