I too have noticed our bikes are not wild about the rain. Oddly enough my Harley's never missed a beat. They were better in the winter as well. Could run my heated gear all maxed out in 20 degree weather all day every day. :)
This just a few miles from the house. Wife loves to drop by and say Hello. They also have peacocks and it sounds just like the old black and white Tarzan movies. :). Found them on a ride.

RCI NC has the most likely explanation. ( or some variation) But there is another possibility the temperature sensor could be heating up and giving in inaccurate readings get a heat gun and test it, could even do it at speed.
Keep going till the problem is resolved. Radiator hoses...
Understood, deferring to the pros given the lower cost and OEM fit is a good way to go. Those shops do a good job. Never seen one fail. Bad work yields a deficit in orders. They care a great deal about their reputation.
Perhaps bring the old one with the new one to a welder. He could make it work. Brings me to a question why not a radiator repair shop? Seen what they can do, been in the car industry a long time.
