Coconut shrimp for dinner last night. Baked, but still tasty with some panko and spices mixed in with the coconut coating. Paired with some fresh mixed green salad.

Tried Sous-Vide Pork Baby-backs.

Rubbed and vacuum-sealed.



Went in the Bath for 20-hours at 145-degrees F.




They come out like this.



Then mopped with Sauce, and under the high-broiler for 10 minutes each side.





Super Delicious!
The bones fall right out.

Tropical tequila sauce from a company called Terrapin Ridge Farms. It's become our favorite for seafood that can benefit a sauce. They have a selection of other products as well. The Hot Pepper Bacon Jam is quite good.

@OldRider - Can't lose with meat and potatoes. I prefer my peas a bit more Al dente though.
