I'm glad I could corrupt you give you ideas to use. ;) Shrimp and sausage with chicken and rice? You're half way to a Gumbo! Some trinity and roux and even with the box meal, you're into an new taste profile with great ingredients that you enjoy.
Oh. . . . I've been making this and gumbo for years. I can't decide which one I like the most, so I usually make a batch of each. The only thing that has changed is the sausage I use. Zatarain's also makes jambalaya, gumbo, alfredo, and scampi pasta dinner mixes. Once again, probably not very authentic, but they are crowd pleasers.

Flanken-Style (or Korean-Style) Beef Short Ribs.

Season with Dry-Rub of choice.

Stack them in the "Instant Pot" on top of the raised rack.
1/2-cup of apple cider Vinegar, and 1 cup of water in the bottom (or a can of cola or beer)
Pressure-cook them for 35 minutes.

They come out looking like this.

While you are pressure-cooking the ribs, you do the breaded-shrimp in the oven.

Mop the ribs with your sauce of choice and put them under the High Broiler for 5-minutes each side.

Yes. . . . I am really hating you right now. :D Down here, there called tablitas; Mexican style. Regardless of who invented them, they're my favorite style of ribs. Absolutely no meat left on the bone. They used to be cheap. . . . and then everybody found out how easy they were to cook, and how delicious they are. Now, they're the same price as steaks. The shrimp. . . . they're shrimp, of course they're gonna be good.

Yeah, they are fairly pricey around here too, but I recently bought a huge "Family Pack" of them at Sam's Club for a decent price.
They are my favorite way to eat Beef Ribs!

I did another batch of salmon patties tonight with the now required garlic/parmesan mashed potatoes. I roasted half a head of garlic in the oven at 450º for 35 minutes and boiled the other half with the Yukon gold potatoes, sea salt, butter, condensed milk and freshly grated parmesan cheese. Served with a side of steamed asparagus and some home made tartar sauce. OMG good stuff. The whole house smells like garlic, and I'm not complaining. This is the only dish, (so far), that I can make for my wife with an entire head of garlic and not have her complain it's "too much garlic".

Roasted garlic.... mmm!

Garlic and asparagus are great prebiotics too.

I might be at risk of alienating myself from the US brothers here, but I don't eat McDontKnows or any other fast food. I love cooking and reasonably healthy food, but paramound* is that my wife and I have the magical dance of gastronomic delight as often as possible.

*ok I got myself. "Mound", due to the fact I often eat too much. The problem is, I'm crap at portions, hate to waste and, invariably cook too much.... LOL
