Grilled lemon glazed chicken breast on a bed of fresh cranberry and quinoa. Covered with chopped granny smith apples. For desert a tall glass of water and unsweetened black tea. 540 calories. When I got home I had 2 dinky small Girl Scout cookies. Almost 300 damn calories for those 2 miniature bite size cookies!!

I am struggling to get my weight down since being injured and out of service. Working to keep under 2,000 calories a day. Hopefully my physical therapy starting next week will have some cardio and strength training to burn some calories.

Good luck with the weight loss efforts. The only way I can lose weight is to maintain under 1k calories a day and 3 mile walks+other exercise. Not much fun when even a tiny treat kills so much of your daily calorie count. Peanut MMs are ~12 cal each, so 8 of those isn't too bad. I can space them out to make them last a bit longer. And forget eating out w/o leaving a lot on the plate. I was raised in a clean your plate family and it's a hard habit to break.

HA! I keep forgetting the before pics. Chopped up red potatoes, Opa's sausage, and some red onion thrown into the mix. 17 minutes in the air fryer....YUM! Y'all might not be able to locate the Opa's sausage, but if you can, you won't be disappointed. :p

Jamaican jerk & olive oil marinade. Pan seared. Finished in the oven. Peach sauce served over meat and bread. Steamed veggies side.

Chicken Taquitos tonight with some salad. Mixed green salad really hits the spot with the Taquitos. I like to add some hot sauce to taste when it's on the plate. We pre-make these in large batches with corn tortillas and freeze them w/o baking. Then you can just pull out what you want and let them thaw for 15 min, then in the oven for 12 minutes or so at 350-375. I like to add some convection broil at the end to crisp them up a bit more.

Show us what you're eating tonight! It doesn't have to be fancy or fattening. ;) I'm back to working a little harder on the weight loss. Winter sucks for that. I only had one of the Taquitos last night and salad. Wife had the two taquito plate. About 250 calories total. 200 for the taquito and 50 for the salad with some fat free ranch dressing. Lunch kinda ran off the rails. But used 1/3 the sugar and subbed canola for butter save 1 Tbs for flavor. The sweetness of the backyard peaches (via the freezer) contrasts nicely with the tart lemon juice. Yummmm!
Now comes the tricky part, staying out of it the rest of the day. :eek:

Looks great! And no kidding, the wife has been baking and decorating cookies for the last two days. I have only had one small 'reject', but hazlenut flavor and yummy. Trying not to indulge.

Since you put it that way. Here's my daily guilty pleasure. I start with yogurt & eggs for breakfast. The rest of the day consists of P3s & power bars. Portion control is my nemesis. This controls the portion size.

Looks tasty. I share the issue with portion size. It's an on-going challenge. Especially having grown up in a 'clean your plate' household.

If you feel like having some fun in the kitchen here is a recipe for a single portion of lasagna that can be tweaked in a variety of ways, either for taste or for lower calories. LINK Fun way to use up some left over protein or get creative with flavor profiles. We buy low fat or fat free things like sour cream and those work well in recipes calling for full calorie ingredients.

My wife likes the Stouffer's brand, but I prefer the lower calorie Michelina's Lean Gourmet offerings. We do frozen entrees or pre-made salads fairly often when we are traveling and don't want a big meal or have indulged during previous stops because that location was all about the food, (New Orleans). Way cheaper than eating out too, which adds up when you're on the road for a month or more.

No pictures from last night. Furnace guys left after 7 pm, so I did a quick braised pork chop and steamed peas and carrots. An easy, satisfying dinner and only 170 calories total. Smithfield 6oz pork chop, split between my wife and I, (240 cal for 6oz), and 2/3 cup of Kroger house brand frozen peas & carrots added 50 cal each.

When it come to food, I weigh the effort to make it against the taste. "From scratch" is often better tasting, and sometimes healthier, but usually requires more effort. My frozen lasagna is delicious, and takes less then five minutes in the microwave. It cooks while I drink my beer & take my shower. (yes, beer in the shower....VERY relaxing) :cool: By the time I finish the shower, the lasagna has cooled enough to eat....yum.

I hear you. I enjoy the creativity of cooking though, so prep time doesn't bother me. Beer in the shower, you say... I've had some days like that. ;) We do what works for each of us. If I'm going to lose weight, I have to stay under 1k calories and that pretty much sucks. And it's hard for me to keep with that day by day, so some days I do, some days I don't. :confused:
